Spicy Chicken & Potatoes in Crockpot

Tonight for dinner I made Spicy Chicken & Potatoes in my Crock-Pot and I thought I would share the recipe with you..  This chicken is not only easy to make & affordable it's healthy too!! 

SPICY CHICKEN & POTATOES IN CROCK-POT
Serves 4

INGREDIENTS

4 - Boneless Skinless Chicken Breasts (frozen)
4 - Russet Potatoes
1 - 10 ounce can of Ro-Tel Original Diced Tomatoes & Green Chilies
1 - Cup of Chicken Broth
2 - Cloves of Garlic - thinly sliced
1/4 - Teaspoon of Crushed Red Pepper
1 - Teaspoon of Mrs. Dash
1/2 - Teaspoon of Black Pepper

METHOD

Peel potatoes and cut into thick slices.  Lay potato slices on bottom of Crock-Pot.  Mix chicken broth, Ro-Tel original diced tomatoes & green chilies, garlic, crushed red pepper and black pepper together.  Place frozen chicken breasts over potato slices.  Pour tomato mixture over chicken evenly. Sprinkle chicken breasts with Mrs. Dash.  Cover and cook on low setting for 8 hours or high setting for 4 hours.  Spoon chicken broth from bottom of Crock-Pot over chicken prior to serving.

Casey Anthony's Probation Ends Friday..

Casey Anthony's one year probation sentence for check fraud ends this Friday.  She will then be free to go and do whatever she chooses without any supervision from the Court or otherwise.  I however think she will have a hard time doing so as she is known as "America's most hated woman" even after she was acquitted last summer of murdering her 2 year old daughter Caylee Marie.  Most of America thinks the title is correct others however feel she may have been guilty of being a liar but that she was not a murderer. 

This case has brought many strong emotions from the public and many people feel she was guilty even after a jury found her not guilty of the charges against her.  She has remained very low key since the verdict and her release.  Who can blame her for that.  I think everyone was ready for a much needed break from the Casey Anthony drama which filled up most of our summer last year.  Well, at least I was.  I wouldn't have agreed with you if you told me then though.  I have to admit, I almost felt like I needed to go to rehab or a support group to get over that trial ending.  Like many others I watched and saw it all... when it ended... I was left with a big ...hmmmpf.  What now I thought??

Well it has been a year and I am happy to say I have recovered from my trial withdrawal for now.  I always wonder how many other people felt the same way.  The battle between Baez and Ashton was just sooo good.  And, I have to admit.. I was crushin on Baez a bit throughout the trial.  I was impressed with his demeanor and I felt his passion.  I'm sure you just rolled your eyes .. but it's just my opinion.. my face is getting a little pink just talking about it.  

 

Now for the twenty million dollar question......What will Casey do now?? 

I guess we will have to wait and see.  I'm sure we will be able to watch everything any person with a camera can catch on tape or film ~ that we choose to spend out time looking at ~ and then some..... through the media... because of them I'm sure we won't miss a thing!

Watermelon...mmm...yum..

This afternoon my best friend brought me a huge seedless watermelon that she bought on the side of the road from a guy in a pick up truck for only a few dollars.  So, I put it in the fridge and decided I would cut it up after dinner tonight.  Now don't get me wrong, I have cut pieces of watermelon sure, but I realized as I heaved the huge melon onto the countertop that I should probably "google" how to cut it up properly because from what I could remember ... I had not. 

so... here are a few tips so you can cut a watermelon like a pro in your own kitchen!!

HOW TO CUT WATERMELON 

Ever get intimidated at where to start when cutting up watermelon? Our step-by-step photo tutorial takes the mystery out of cutting up watermelon into uniform wedges or cubes.
 
Here's how to cut watermelon wedges

  1. Cut watermelon in half lengthwise.
  2. Cut each half in half again lengthwise.
  3. Cut each quarter into slices as pictured above.

To de-seed a watermelon:
  1. Cut watermelon in half, then in quarters.
  2. Cut through the flesh of the melon along the seed line with a pairing knife. Now, lift off the piece of the melon you just cut.
  3. Using a fork, scrape the seeds from the piece you just removed and the remaining flesh on the rind.

I cut half of the watermelon up into nice little square/rectangle pieces by using the directions above and ... it turned out perfect!  Take a look....
